Long Long Long Overdue Update

Hey everybody
Nearly 3 months ago i got some unexpected news, i have diabetes,type 1.
I had to stay in the hospital for 8 days and in isolation for 5 of those.
It was very boring.
I am insulin dependent, 5 ingections a day ouch.

Long overdue update

Last month Mum and I went to the OpShop concert that was here in Rotorua. We had been waiting for it for over a month and were really, really looking forward to it. Mum was 15 weeks preggy then - although you can hardly see her bump!!

After the concert we lined up for autographs and Mum was able to get a photo of me and Jason. It's taken with Mum's phone so it's not that clear, but still an awesome memento. Mum told the band that it was my first concert and they were really neat about it. They all signed a big poster that one of the advertising people gave me which was a huge bonus as they weren't giving them to anyone else. (Later that week we got it laminated and it's now above my bed.)
We both had the BEST time and can't wait for the summer concert season so we can go see them again.

We were at my Mum's friends the other day and one of her dogs decided he just had to come inside, even with the door shut!

One of her other dogs decided he just had to wear a dress.....seriously he wriggled into it himself.

We look after a 2 yr old boy most Wednesdays for our neighbour and this was the toy that he chose to play with this week.

My Stepdad made it for my little brother.

It's made from firewood and recycling.

Isn't it cute.

We are going to make a dollshouse for me which I can't wait to start.

I love puzzles but we haven't done one for a while so I got a 1000 piece one out for Mum and I to do.

We like to sort all the edge pieces first and then get the whole outside bit done before we start on the middle.

Today we went to a not back to school picnic at a local lake. It was really windy and the waves were more like ocean waves but we had so much fun. I made a new friend and we had heaps of fun in the water together.

We had a cool Christmas. Here are some photos of some of my presents.

We got a trampoline for Christmas. It was a complete surprise and it's so much fun. It has a net but we don't have any photos of it yet.

My Aunty bought me a potting wheel. It took a little bit of getting used to but I finally got the hang of it. I made a little bowl for my Dad.

I also got this dress-up doll book. It's very cool.

All below is a straight copy. Darcy got a very cool magnetic warrior dude from his Aunty & Uncle in Australia that he just loves. And wow - it only took him about an hour to lose the head! Yah for eagle-eyed sisters who are willing to get that far under the couch. Ewwwww, can you say giant dust bunnies!!! LOL

Hannah got a beautiful handbag from the same Aunty & Uncle. Verry styley.

I made a pavlova

We had a special lunch today for Mum, my brother and me and I made my very first pavlova. (It's a meringue dessert). It was so yummy with cream and strawberries on it.

Here is a recipe for it.

This is a typical recipe for a "homemade" Pavlova

4 egg whites
1 teaspoon vanilla essence
¼ teaspoon salt
1 teaspoon vinegar
1 cup castor sugar
2 teaspoons cornflour (cornstarch)

Preheat the oven to 150°C(Gas Mark 2).Beat egg whites and salt in a bowl until soft peaks form. Gradually add the castor sugar while beating. Continue until stiff peaks form. Beat in the remaining ingredients, vanilla essence, vinegar and cornflour. Turn mixture out onto a baking paper covered tray. Shape into a circle approximately 23 cm (9 in) in diameter.Reduce oven temperature to 140°C. Bake for 15 minutes, then further reduce the oven temperature to 120°C and bake for 1 ¼ hours. Cool completely in the oven. Top with whipped cream and your choice of fresh fruit.

Some "secrets" to successful Pavlova making!
- Ensure implements are scrupulously clean.
- Never use a copper bowl to beat the eggs.
- Egg whites should be whipped at approximately room temperature.
- Ensure that no yolk gets into the egg white.

Mum and I bought some Henna on Tuesday and we put it in yesterday. I'm so pleased with how it looks. Mum thinks I look just like my cousin (a natural redhead) and now she wants to do her hair. : )

A friend of my Mums gave us some pine branches and Mum made it look like a tree and then I decorated it. It looks so pretty and smells lovely.

Mum took this photo this morning. It's the first time she's been out to the garden since Saturday because it's been raining so much. Everything has grown heaps especially my super capsicum!

Carrot soup

Tonight I made some carrot soup, heres the recipe:

My Carrot Soup Recipe

2 to 3 Tbsps of butter

1 medium sized onion, diced

2 cloves of garlic,diced

2 small carrots,unpeeled and grated

Fresh herbs,chopped finely

1-2 cups vegetable or chicken stock

1-2 cups boiling water

Salt & pepper to season

Melt the butter in a big heavy bottom pan, add onions and cook until soft. Add garlic, cook for a few minutes and then add remaining ingredients. Bring to the boil and then simmer for about 20 minutes or until it suits your taste. Check seasoning and enjoy.
